I found this recipe in one of my mom’s recipe books. It is so easy to make and they are DELICIOUS!!!!! I Love Cheesecake!! Miniature Cheesecakes
Combine crumbs, sugar, and margarine. Press rounded measuring tablespoonful of crumb mixture onto bottom of each of six(6) paper muffin cups. Bake at 325 degrees, 5 minutes. Combine cream cheese, sugar, juice, and vanilla, mixing at medium speed on electric mixer until well blended. Blend in egg. Pour mixture into cups, filling each cup ¾ full. Bake at 325 degrees for 25 minutes. Cool before removing from pan. Chill. Top with preserves just before serving. Note: Always have your parent help you with the oven.

Preheat oven to 350 degrees. Butter and flour a 13 x 9 in pan. Melt the butter. Beat eggs with sugar, and add vanilla, flour, cocoa, baking powder and melted butter. Add chopped nuts. Bake at 350 degrees for 20-30 minutes or until a toothpick inserted in center comes out clean. Cool cake completely. Dust with powdered sugar.
